2. Tawa Paratha With Paneer Bhurji And Kachumber Salad

This meal works well when everyone wants something hot and fresh. You can make tawa parathas using regular wheat dough and shallow-fry them on a hot pan with very little oil. For the paneer bhurji, crumble fresh paneer and sauté it with onion, tomato, green chilli, ginger, and turmeric. Add coriander leaves before serving. The kachumber salad adds crunch and freshness. Mix chopped onion, tomato, cucumber, lemon juice, and a pinch of salt. This meal works best when eaten hot and fresh off the stove. It can also be packed for lunch the next day if leftovers remain.

3. Khichdi With Ghee And Achar

Khichdi is one of the simplest and most comforting Indian dinners. It is made using rice and moong dal, both of which are easy to digest. Wash equal parts of rice and dal. Cook with turmeric, salt, and enough water to keep the texture soft. You can also add chopped vegetables like bottle gourd, carrot, or spinach to make it more nutritious. Begin by dry roasting rava and setting it aside. In a separate pan, heat oil and temper mustard seeds, urad dal, curry leaves, and chopped ginger. Add chopped vegetables like onion, carrot, and beans. Add water and bring it to a boil. Slowly add the roasted rava while stirring to avoid lumps. Cook till soft. This is a simple thali-style dinner with protein, fibre, and flavour. You can use a combination of masoor, toor, and moong dals to make a balanced mixed dal. Soak them together and cook until soft. In a separate pan, prepare a tadka using cumin, garlic, green chilli, and hing. Pour this over the cooked dal. Add salt and lemon juice. For jeera rice, cook basmati rice and temper with ghee and cumin seeds. This dinner is easy to prepare in parallel and gives the feel of a home thali without too many items. 6. Besan Cheela With Mint Chutney And Boiled Potatoes

Besan cheela is quick to cook and does not require any fermentation. It is made using gram flour, water, and basic spices like turmeric, ajwain, and green chilli. You can also add grated vegetables like carrot or spinach. Mix everything into a smooth batter and cook like a dosa on a tawa. Serve with mint chutney made from pudina, coriander, green chilli, lemon juice, and salt. You can boil some potatoes with salt and serve them as a dry side dish. This meal is simple, warm, and easy for children and older adults to enjoy. It also suits days when you want to cook without too much oil or effort.
