Step 1

Blend sprouts coarsely (don’t make a paste). Add paneer/tofu, veggies, spices, and oats/besan – mix and form a cutlet.

Step 2

Air-fry or pan-roast with very little oil until crisp

Warm the taco shell; place the cutlet inside. Add lettuce, chopped veggies, and a spoon of yogurt-mint dip.
