Tuvar Dal Tadka

#Curries Tuvar Dal Tadka is an evergreen, popular and classic North Indian lentil dish made with tuvar dal (split pigeon peas) or a mix of lentils, cooked until creamy and infused with a flavorful tempering (tadka) of oil or ghee, cumin, garlic, red chillies and herbs, served hot with rice or roti.

Step 1

Wash dal thoroughly in fresh running water 2-3 times and soak for 5 minutes. Now transfer it in pressure cooker. Add water, salt and turmeric powder and mix well and place the lid and cook for 5 whistles. Switch off the flame and let pressure releases automatically.

Step 2

Heat ghee in a wok. Add cumin seeds and when cumin seeds splutter add asafoetida and saute for 30 seconds.  Add chopped onion and grated ginger and saute till onion gets golden brown. Now add tomato puree and chopped green chilli and saute for 1 minute. Add red chilli powder, coriander seeds powder and mix well. Now cook till oil leaves the sides.  Now pour the dal from pressure cooker on this tadka and give it a boil.

Step 3

Now transfer dal in a serving bowl.  In a separate pan heat butter. Add mustard seeds and when mustard seeds splutter add whole red chilli and garam masala. Transfer this tempering over dal.  Serve this tuvar dal tadka with rice or chapatti garnished with chopped coriander leaves.
