Step 1
Prepare the Dough: Mix all ingredients for the dhokli dough and knead into a medium-soft dough (like thepla dough). Cover and keep aside.

Prepare the Stuffing: In a bowl, mash the boiled potatoes.

Add red chilli powder, turmeric, hing, coriander–cumin powder, salt, garam masala, and chopped coriander.
Step 4
Mix well to make a smooth stuffing.
Step 5
Prepare the Dal Base: Heat oil in a deep pan.
Step 6
Add mustard seeds, cumin seeds, hing, dry red chilli, bay leaf, dried fenugreek leaves, cloves, star anise, curry leaves, and peanuts. Sauté well.
Step 7
Add the boiled and mashed toor dal.
Step 8
Add water as required to make a medium-thick consistency.
Step 9
Add red chilli powder, turmeric, salt, coriander–cumin powder, and jaggery.

Mix well and let it boil on medium flame.

Make Stuffed Dhokli (Kachori Style)

Take a small portion of dough and roll it like a small puri.

Place about 1 tbsp potato stuffing in the center.

Seal and shape like a kachori.

Prepare all stuffed dhoklis similarly.

Cook the Dhokli

Once the dal is boiling, gently add the stuffed dhoklis one by one.

Cover and cook on medium flame for 15–17 minutes, stirring gently in between.

After cooking, add kasuri methi, fresh coriander, lemon juice, and 1 tsp ghee. Mix gently.
