Wash sabudana 2–3 times. Soak in just enough water (level with sabudana) for 6–8 hours / overnight. Check: pearls should be soft, separate (not sticky/mushy).
Mash potatoes in a bowl. Add soaked sabudana + peanut powder + chilli + cumin + salt + coriander + lemon. Mix gently (don’t over-mash).
Shape into small flat patties. Heat oil (medium flame). Fry till golden & crispy on both sides. Serve hot with curd or vrat chutney.
