Potato Muffins

#Aloo Delicious potato cup cakes or muffins, very easy to prepare, with easily available ingredients at home, ideal to serve as a snack .they are very colourful and the best thing is that their preparation is very fast. Its flavour is wonderful as well as its soft interior texture, you can serve them topped with tomato sauce, sour cream, pizza sauce , or according to your taste. These potato muffins will delight to everyone ,can be packed in lunch box .So bake these delights!

Step 1

Peel potatoes, grate or and mash with a fork.

Step 2

Add vegetables with all remaining ingredients in a bowl .

Step 3

Stir until a smooth and homogeneous mixture is obtained. Check the seasoning, add if needed any one .

Step 4

Prepare the tray of muffins with cupcakes moulds , rub with butter, you can put it in paper capsules or directly in the moulds.

Step 5

Divide the mixture with a spoon.

Step 6

Bake for 15 – 20 minutes at 200F or until the muffins are golden brown.

Step 7

Remove the tray, cool for five minutes and serve potato muffins topped with sour cream or seasoned yogurt and extra oregano and chilli flakes.

Step 8

Potato muffins are ready to serve .
