Potato Birds Nest

#Aloo Birds nest ..a unique looking and tasty snack made mainly with Aloo and paneer Suitable for all age groups

Step 1

Peel potatoes and mash them

Step 2

Add 40gm grated paneer ,chopped onion ,ginger ,and the spices for the eggs as given. This mixture is ready for the nests

For eggs: Grate the 80gms paneer and mix with salt and coarsely ground pepper (this gives it a natural birds egg look.

Step 4

Add cornflour and mix well. Make very small firm balls (with no cracks ) and keep aside

Step 5

For slurry: Mix the cornflour with salt and a little water

Step 6

Coating: Break vermicelli into small pieces

Step 7

Take potato mixture and divide in 5parts

Step 8

Make a ball of each ,flatten it a bi and press centre to get it flatter than the outside (a kind of flat bowl shape )

Keep applying cornflour if they are cracking from anywhere

Step 10

Keep them upside down so the shape remains maintained

Step 11

Dip each in the slurry and then place in the plate of vermicelli. Coat it properly with vermicelli

Repeat with remaining ones

Heat oil to medium hot

Step 14

Carefully put the nests in it to fry (put 2at time not all together )

Splash oil on them and cook till brown

Step 16

After frying all five ,then add the paneer eggs and fry them very lightly so as to maintain the creamy look

Place nests on a plate or tray

Step 18

Add a little coriander chutney in each

Step 19

Then a little imli chutney

Step 20

Place 3eggs in each

Step 21

The chutneys will help them to stick in place in the nest

A coriander leaf can be placed to give it more of a nest look

Serve them as a great snack or starters before meals and see the look of awe on everyone’s face
