Boil potatoes till just tender (not mushy). Peel, cube, and keep aside.
Heat a pan and dry-roast sesame seeds on low flame till golden and aromatic. Cool slightly, then grind into a coarse powder.
Heat oil in a small pan. Add fenugreek seeds and let them turn dark brown (not black).
Switch off the flame and immediately add turmeric powder to the hot oil so it blooms without burning.
In a bowl, combine potatoes, onion, green chillies, and ground sesame.
Add the hot oil mixture over the potatoes.
Add lemon juice and salt. Mix gently till everything is well coated.
