Methi launji

Step 1

To make methi ki launji, heat the oil in a pan, add the cumin seeds, asafoetida,kalunji ,red chillies, cloves and cinnamon and sauté on a medium flame for a few seconds. Add the soaked and drained fenugreek seeds and mix well

Step 2

Add chilli powder, coriander powder, raisins, dried mango powder, and salt, mix well  and saute for few seconds.

Step 3

Now add  1/2 cup water. Mix everything really well. Cover and cook on low flame for 3-4 minutes.

Step 4

Check the fenugreek. Now add sugar, chopped jaggery (gur) and 1/4 cup of water into it and mix well. Cook until sugar melts completely and add raisins,  dry dates, soaked cashews and Now cook until launji gets thick and dense in consistency. Keep stirring the launji at regular intervals. Keep the flame medium.

Step 5

Methi launji is ready, turn off the flame. Enjoy with chapati or puri
