Step 1

Mix maida, salt, and ghee. Rub until crumbly. Add water and knead a stiff dough. Rest for 20 minutes.

Step 2

Lightly roast khoya on low heat until slightly aromatic. Cool it. Mix sugar, nuts, raisins, coconut, and cardamom.

Step 3

Roll small puris from the dough. Place 1–2 tbsp filling in the center. Fold into a half-moon and seal edges (press or twist).

Step 4

Fry on medium-low heat until golden and crisp.
