Step 1

Peel a fresh bottle gourd. Using a julienne peeler or a knife shred it into long, thin noodles. Avoid the soft, seedy core.

Step 2

Place the lauki juliennes into a non-stick pan over medium heat. Add your powdered sugar and a few fresh rose petals.

Step 3

Toss everything together. Cover the pan with a lid for a couple of minutes to let the lauki release its natural moisture and soften up.

Step 4

Uncover the pan and add the crushed cardamom and another sprinkle of rose petals.

Step 5

Continue tossing the noodles until they are tender but still hold their shape.Take it off the heat.

Step 6

Spread the cooked lauki noodles out flat on a serving plate.

Step 7

Drizzle a few drops of rose essence evenly over the top.

Step 8

Finish the dish by dusting it generously with boora (powdered cane sugar) and scattering a few more fresh rose petals over the top for that final aesthetic touch.

Serve as healthy sweet as Prasad for vrat or top over rabri .
