Khajoor ki til patti” is a sugar-free, healthy Indian sweet (brittle) made from dates and sesame seeds. The dates act as a natural binder and sweetener, replacing the traditional jaggery or sugar.
Dry roast the sesame seeds in a pan over a low flame until they are lightly golden and fragrant. Remove them from the pan and set aside to cool slightly.
In a food processor or grinder, process the chopped dates into a sticky paste. Soaking the dates in hot water for 30 minutes beforehand can make them easier to blend, especially if they are dry.
In a pan, heat the ghee or oil. Add the date paste and cook it for about 2-3 minutes, stirring constantly until it softens and absorbs the fat.
Turn off the heat and quickly add the roasted sesame seeds, and cardamom powder. Mix everything well with a spatula until the mixture is evenly combined.
Immediately transfer the mixture onto a greased plate, butter paper, or a smooth greased surface. Be quick as the mixture hardens as it cools.
Use a greased rolling pin to flatten the mixture into a thin, even layer (patti). While it is still warm, use a sharp, greased knife to cut it into desired shapes .
Cool down completely to harden. Store the pieces in an airtight container for up to a month.
