Kaju Katli, also known as Kaju Barfi, is one of the most cherished Indian sweets, especially during Diwali and weddings. Traditionally made with cashew powder, sugar, and ghee, it has a smooth, melt-in-the-mouth texture.

In this fusion-inspired recipe, the same cashew base is rolled into bite-sized truffles instead of being set into diamond shapes. These truffles are then coated or rolled in dark chocolate, cocoa powder, chopped pistachios, or desiccated coconut. The result is a luxurious mithai-meets-chocolate dessert that appeals to both traditional and modern palates.

Make Cashew Powder

  • Grind cashews in a blender until fine (do not over-blend, or they will release oil).

  • Heat sugar and water in a pan until it reaches one-string consistency.

  • Add cashew powder to syrup, stirring continuously on low flame.
  • Cook until mixture thickens and leaves sides of the pan.
  • Add ghee and cardamom powder, mix well.

  • Transfer mixture to a plate. Once warm, grease palms with ghee and roll into small round balls.

  • Dip some truffles in melted dark chocolate and set on parchment.
  • Roll some in cocoa powder, some in chopped pistachios, and some in coconut for variety.
