Holi Special Soft and Stuffed Dahi Bhalla

Step 1

Wash and soak urad dal for 6–8 hours.

Step 2

Drain and grind to a smooth, fluffy batter using minimal water.

Step 3

Add ginger, green chilies, hing, and salt.

Step 4

Whisk well for 3–4 minutes to incorporate air (this makes soft vadas).

Step 5

Heat oil on medium flame.

Step 6

Drop small portions of batter into hot oil.

Step 7

Fry until golden brown and crisp.

Step 8

Remove and immediately soak in warm water for 10–15 minutes. Gently squeeze excess water and set aside.

Step 9

Whisk yogurt until smooth. Add salt, sugar (if using), and roasted cumin powder. Mix well.

Step 10

Place soaked vadas in a serving dish. Pour prepared yogurt over them. Add tamarind chutney and green chutney. Sprinkle spices and garnish with coriander and pomegranate.
