Healthy Potato Muffins

#Aloo Health muffins using potatoes instead of just flour Great for breakfast or with tea/coffee

Step 1

Grease or line a 12 cup muffin pan

Step 2

Beat eggs ,add jaggery,oil,water and mashed potatoes to it

Step 3

Sieve flour with cinnamon,soda and baking powder

Step 4

Mix nuts in it

Step 5

Gently fold the flour mixture into the egg mixture

Step 6

Do not over mix

Step 7

Spoon batter into prepared muffin cups till each is 3/4 th full

Step 8

Bake in a preheated oven at 180 degrees for 20to 25minutes

Step 9

Cool on a wire rack
