First of all, take a bowl and take the frozen ghee in it, then add ice cubes in it and then whisk the ghee thoroughly. Whisk until the ghee is completely white. Then add a little milk and whisk. Then slowly add chickpea flour and maida . Do not add all the flour at once. Otherwise, it will look like a lump and if it does, it will not get better. After all the flour and milk and ghee have been mixed evenly, add cold water of ice and prepare a thin solution. Now heat the ghee on the other side. Put the mixture on ice and keep it aside till the ghee is hot. Now when it is hot add lemon juice to the mixture and mix everything again. Ghewar will be more crispy with lemon juice.Now when the ghee is hot, put a round cutter in the middle to make all the ghever same size. Ghee has to be frying hot.Now when the ghee is hot, add the mixture little by little with the help of a spoon from the top so that the

Ghever looks neat and very nice. I used four teaspoons of the mixture to make a Ghever. So that the second can be the same size. Do fry it till it turns golden brown
Take a pot and heat the ghee in it, then add milk, milk maid ,kesar and mix everything. Stir the mixture constantly. When the mixture thickens, turn off the gas and mix the cardamom powder with the dry fruit powder and then leave for cooling.
Now make a rabdi On a kadai put the ghee and add mil, milkmaid /sugar then continue stare the mixture… Jab milk thoda thik ho jaye tab isme khoya milaye or mix dryfruits powder add kare or sath hi mai elachi powder add kare… Or thik si lachedar rabdi taiyar kare…
Ab is rabdi ke 5 hisse kare or sabhi ko flavour de..Ek mai straberry or rose ka pulp add kare or strawberry rose rabdi reddy kare.Dusre mai kiwi ka pulp add kare or kiwi rabdi ready kare..3 rd mai aprajita ke flower ke pest ka thik sa pani add kare par dhyan rakhe rabdi ptali na ho jaye..4th mai 1 tsp kesar ko 1chamch dhoodh mai bhigo kar rakhe or vo add kare or kesar rabdi add kare..5th part mai passion fruit ka pulp add kare or passion fruit rabdi ready kare.Take a bowl, mix sugar and water in it and let it boil and make 1.5 strings of syrup. Then add 2 to 3 drops of lemon juice in it and then add saffron and cardamom powder in it. Mix everything and keep the syrup aside. If you want to eat only syrup head ghee then add syrup on the oil and then add pistachio slices mixed with dried fruit powder and serve.it. Mix everything and keep the syrup aside.
If you want to eat ghewar with syrup only then pour syrup on the ghewar and then sprinkle mixdryfruit slices and serve.But we are serving it with rabdi .Now take the ghewar with syrup applied and then add fruity rabdi and flower rabdi as per your choice . And sprinkle some dryfruit sliced and kesar and rose petals and some golden varakh and then serve. Enjoy the delicious fruit and flower rabdi ghevar.
