Step 1
Prepare the Batter In a bowl, mix flour, semolina, sugar, and cardamom powder. Add fresh orange juice and whisk well to make a smooth batter. Adjust the consistency with a little water or milk. Let the batter rest for 10 minutes.

Prepare the Sugar Syrup In a pan, add sugar and water and heat until the sugar dissolves and forms a light syrup. Add saffron strands, cardamom powder, and kevda water. Mix well and keep the syrup warm.
Step 3
Fry the Malpua Heat ghee or oil in a pan. Pour a small ladle of batter into the hot oil and fry on medium heat until the malpua becomes golden brown from both sides.
Step 4
Soak in Syrup Remove the fried malpua and immediately dip it into the warm saffron-cardamom sugar syrup for about 1–2 minutes.
Step 5
Serve Serve warm. Each malpua will be soft, juicy, and aromatic with the flavor of orange, saffron, cardamom, and kevda.
