First, grind the Samak rice (Barnyard millet) and Sabudana (sago pearls) to prepare a flour. Now, add salt, yogurt, a ginger-chili paste, and oil to this flour. Mix everything together, and then add water as needed to create a batter—ensuring it is neither too thin nor too thick. Cover the mixture and set it aside for 15 to 20 minutes.
Now, let’s prepare the filling. Meanwhile, heat some oil in a separate pan and add cumin seeds and sesame seeds. Next, add the ginger-chili paste. Then, add the boiled and mashed potatoes.
Add lemon juice, sugar, fresh coriander, and crushed peanuts to the mixture, and mix everything thoroughly. Let it cook for 5 minutes. Now, allow the sandwich maker to heat up. Give the batter another stir and add some chili flakes.
Then, mix in the Eno fruit salt and stir briefly. Immediately pour a small spoonful of the batter into the hot sandwich maker. Let it cook for 2 minutes; then, add the prepared filling on top, followed by another layer of the Samak rice batter. Cook until golden brown on both sides. Finally, serve it with chutney.
