Step 1

For the Sago Appe: In a large bowl, combine the soaked sago, mashed potatoes, crushed peanuts, chilies, ginger, cumin, coriander, and rock salt. Knead gently into a soft dough.

Grease your palms with a little ghee and roll the mixture into small, smooth, ping-pong-sized balls.

Heat the appe pan on a medium-low flame and add a drop of ghee into each cavity.

Place the balls in the cavities and cook, turning them occasionally with a wooden skewer or spoon until they are uniformly golden and crisp.

For the Relish: While the appe cook, whisk together the mashed kiwi, roasted cumin, black pepper, and mint. Adjust sweetness as desired.

Assemble: Top each appe with a small dollop of the kiwi relish and a single pomegranate seed.

Step 7

Serve immediately while the appe are hot and the relish is cool.
