Step 1
Peel the boiled potatoes and grate them. Chop onion, ginger, and green chilies finely.

Heat oil in a pan. Add cumin seeds and asafoetida to it. Now add coarsely ground fennel and coriander seeds to it. Add chopped onion, ginger and green chillies, and fry.

Now add red chili powder, coriander powder, and mix. Add grated potatoes. Now add salt and mix. Add dry mango powder and garam masala powder and fry the masala.

Take flour in a bowl. Add salt, ajwain, and ghee to it and mix well with hands.

Knead soft dough with the help of water. Cover the kneaded dough and keep it for 15 minutes. After 15 minutes, churn the dough again.

Make dough balls. #Note: Make the dough balls big or small as per your choice. Now take a dough ball and give it a bowl shape with the help of your hand, then fill it with potato and onion masala.
Step 7
Close the masala filled dough ball with your hand and give it the shape of a kachori. Make all the kachoris in this way.
Step 8
Heat oil in a pan. Keep the flame low. Add the kachori and fry till it becomes golden brown.
Step 9
Make all the kachoris in this way.
Step 10
Serve with coriander mint chutney and date tamarind chutney.
