  • Boil pasta in salted water until al dente. Reserve 1 cup pasta water and drain the rest.

  • In a food processor, pulse walnuts until finely ground but not completely smooth.

Prepare the Sauce

  • Heat olive oil in a skillet over medium heat. 
  • Add garlic; sauté for 1 minute until fragrant. 
  • Stir in ground walnuts; toast for 2–3 minutes.

  • Pour in heavy cream and cook for 2–3 minutes until slightly thickened. 
  • Stir in Parmesan until melted and smooth. 
  • Season with salt, black pepper, and red pepper flakes.

  • Add cooked spaghetti to the skillet. Toss well to coat in the sauce. 
  • If sauce is too thick, loosen with reserved pasta water, a little at a time.
