Step 1

Soak urad dal for 5–6 hours. Drain and grind it into a smooth thick batter using little water.

Step 2

Add salt and whisk the batter well until light and fluffy.

Step 3

Heat oil in a deep pan. Drop small portions of batter into the hot oil and fry until golden brown.

Step 4

Remove the vadas and soak them in warm water for 10 minutes.

Step 5

Gently squeeze the water from the vadas and place them in a serving dish.

Step 6

Whisk the yogurt with salt and sugar until smooth and creamy.

Step 7

Pour the yogurt over the vadas.

Step 8

Top with tamarind chutney, green chutney, roasted cumin powder, red chili powder, and black salt.

Step 9

Garnish with coriander leaves and sev or pomegranate seeds. Serve chilled.
