Wash, peel, and grate the carrots. Heat 1 tablespoon ghee in a large skillet or pan, add the grated carrots, and sauté over medium heat for 5 to 7 minutes, stirring constantly.
When the carrots become slightly soft, add the sugar. Cook, stirring, until the sugar is well mixed and dissolved into the carrots.
Once the sugar is fully incorporated and any liquid has evaporated, add the khoya (mawa). Mix well and cook for another 5 minutes, stirring continuously.
Finally, add 2 tablespoons ghee, cardamom powder, and the chopped nuts. Mix well and turn off the heat. Your hot and delicious Gajar Halwa is ready to serve, and it comes together quickly with this recipe.
