This traditional Maharashtrian specialty is a staple during the Harvest Sankranti festival, marking the beginning of the Makar Sankranti harvest celebrations🎋🌾. This special bhaji is made with a mix of ingredients like sesame seeds, peanuts, dry coconut, winter veggies, and various spices, all blended together to create a sweet and savory paste. It’s often served with traditional foods like til laddoo, puran poli, and other festive delicacies, adding a rich flavor to the celebrations.🎋🌾

Step 1

– In a blender jar, combine roasted onion, roasted dry coconut, roasted garlic, roasted ginger along with some water and blend it into a paste

Step 2

– In a bowl, combine all the veggies and keep aside

Step 3

– Heat oil in a pan, add mustard seeds and let it splutter

Step 4

– Now add curry leaves, spring onion greens, green garlic and sauté for 1 minute

Step 5

Add prepared vatan and cook for 7-8 minutes

Step 6

– Now add all the powdered spices and sauté for another 2-3 minutes

Step 7

Add all the veggies, peanut, ambadi, white sesame, tilkut, salt and mix well

Step 8

– Now add water as required and let it cooked cover until done

Step 9

– Serve hot with till wali bajra bhakri and enjoy
