Prepare the Dough: In a mixing bowl, combine the flour, salt, and ghee/oil. Mix until the mixture resembles breadcrumbs. Gradually add water to knead a very firm, stiff dough. Cover and let it rest for 10-15 minutes.
Make the Bhakhri: Divide the dough into 3-4 equal portions. Roll each portion into a small, thick circle (approx 1/4 inch thick).
Cook the Base (Tawa): Heat a non-stick tawa or griddle on low-medium heat. Place the rolled bhakhri on it. Cook on a slow flame, pressing down with a cloth or khakhra press, until it turns crispy and golden brown on both sides.
Assemble the Pizza: While the bhakhri is still on the tawa on low heat, spread a layer of pizza sauce, followed by a generous amount of grated cheese and your choice of vegetables.
Cook/Melt Cheese: Cover the tawa with a lid and cook on low heat for 3-5 minutes, or until the cheese is completely melted and the base is crispy.
Serve: Sprinkle with oregano and chili flakes, cut into slices, and serve hot.
