Paan flavoured Til Chikki Laddoos

The beginning of every year sees a major comeback of til (sesame seeds) in various forms of snacks and sweets. Indian kitchens come alive with the nutty aroma of roasting sesame. Til Chikki and Laddoos are more than just sweets; they are the quintessential symbols of Makar Sankranti. Historically, these treats were crafted to provide the body with much-needed warmth and healthy fats during the coldest months. Whether it’s the satisfying “snap” of a thin chikki or the chewy, melt-in-your-mouth comfort of a rolled paan flavoured laddoo, these treats represent a celebration of harvest and the promise of longer, brighter days ahead.

Step 1

• Dry roast white sesame seeds on low-medium flame for 2-3 minutes.

Step 2

• Keep aside and let the sesame seeds cool down.

Step 3

• Reserve ¼ cup sesame seeds for coating laddoos .

Step 4

For –betal leaves stuffing-

Step 5

• Chop betal leaves and grind with water .Strain water.

Step 6

• Pour this water in a cooking pan with sugar and cook till thick syrup is obtained .

Step 7

• Now ,add nuts powder and Cardamom powder and mix well. Keep aside to cool a little

Step 8

• Make small tikkis with betal leaves mixture and keep aside to stuff in laddoos .

Step 9

• Take butter paper, parchment paper or foil paper, and grease it.

Step 10

For Sesame seeds chikki laddoos

Step 11

• Heat a pan and pour less than1cup water and sugar in it to melt it.

Step 12

• Cook till you get a thick syrup. Add a tablespoon of ghee to get better result.

Step 13

Add roasted sesame seeds and cardamom powder in the syrup and mix well.

Step 14

• Over the greased butter paper, keep ring shaped small mould and pour some prepared sesame seeds-sugar mixture into it followed by ,paan nuts tikki .

Step 15

• Over paan nuts chikki ,pour again sesame seeds-sugar mixture. let it semi set .

Step 16

• Carefully shape it into ladoos shape .

Step 17

• Coat it in sesame seeds . Garnish with chopped pistachios, Dry rose petals and saffron strands .

Step 18

• Similarity prepare all laddoos .
