Step 1
Firstly peel off the skin from carrots and grate them.
Step 2
Heat up the ghee in heavy bottom pan. Once ghee gets heated add grated carrots and cook on low to medium flame for 10 to 12 mins stirring occasionally.
Step 3
Now add milk and sugar. Mix well and cook on high flame for 10 to 15 mins stirring occasionally. Cook until milk is almost evaporated and thickens. Then add dry fruits, cardamom powder and nutmeg powder. Mix well and cook further for sometime. Switch off the flame. Keep aside 4 to 5 mini gulab jamun and add rest to the prepared gajar halwa and mix well.
Step 4
Now take shot glasses. Microwave prepared gajar halwa along with gulab jamun for a minute if needed.
Step 5
Fill 3/4 glass with halwa. Top with a scoop of vanilla ice-cream. Place one mini gulab jamun, garnish with sliced pistachios and serve.
