Gajrela (carrot kheer)

#carrot Gajrela, also known as carrot kheer, is a traditional Indian dessert made by slow-cooking grated carrots in milk. It is sweetened with sugar and flavored with cardamom, then enriched with ghee, dry fruits, or khoya. This rich and creamy sweet is especially popular in winter and served on festivals and special occasions.

Step 1

Add milk in a heavy bottle pan and boiled and cook in low flame till reduced 1/2 milk.

Step 2

Heat Ghee in a pan,add grated carrots and saute 4-5 minutes.

Step 3

Add thick milk and cook on low flame till carrot become soft.

Step 4

Add khoya and mix well,cook another 5 minutes.

Step 5

Add elachi powder, saffron strips,chopped cashew, almond and raisins and mix well.

Step 6

serve warm or chilled garnish with chopped dry fruits.
