Carrot Aloo & Peas mix vegetable sabji

#Carrot The winter special red carrots and fresh green peas subji is very easy and simple recipe. This Punjabi style dry dish made with potatoes, carrots and green peas pairs well with roti or paratha. Aloo Gajar Matar Recipe uses very few ingredients and is not even heavily spiced.

Step 1

Wash, peel and chop carrots and potatoes. Wash green peas.

Step 2

Heat oil in a wok. Add cumin seeds and when cumin seeds splutter put finely chopped onions and fry till golden. Add ginger and garlic paste and chopped green chilli and saute for 1 minute.

Step 3

Add pureed tomatoes in onion mixture and roast it on low flame till it leaves oil.

Step 4

Add salt, red chilli, turmeric and coriander seeds powder and mix well.

Step 5

Add chopped carrots, potatoes and green peas and mix it well in prepared masala. Add 2 tb sp water and cover the lid and cook on low flame till it gets soft. It takes 7-8 minutes to cook.

Step 6

Check it by pressing a pea. If it is soft that means it is ready. Switch off the flame.

Step 7

Add garam masala and chopped coriander leaves and mix.

Step 8

Serve this nutritious mix vegetable with chapati or parantha.
