Awadhi Biryani

#Carrot Awadhi biryani is heavily influenced by the Nawabs of Awadh and is the most popular delicacy of India. Awadhi Biryani came into existence from the region of Awadh in India. Awadhi Biryani is cooked in ghee with carrots and other vegetables which gives the essence of the spices browned in this.

Step 1

Wash and Soak rice.

Step 2

Wash and chop tomatoes and grind in a mixer and make puree.

Step 3

Peel wash and chop onion lengthwise.

Step 4

Peel, wash and chop potatoes, beans, carrots. Clesn fresh peas.

Step 5

Heat ghee in a pressure cooker. Add cumin seeds and when cumin seeds splutter add whole masale and saute for 30 seconds.

Step 6

Add ginger garlic paste and saute for 30 seconds. Add chopped onion and cook till translucent. Add ground tomato puree and cook for 1 minute.

Step 7

Now add fresh peas and saute for 1 minute.

Step 8

Add all chopped vegetables and saute for 2 minutes. Add all dry masale ingredients and mix.

Step 9

Add rice and saute for 1 minute. Now add water. Place the lid and cook till 2 whistles. Let pressure release automatically.

Step 10

Open the lid. Mix.

Step 11

Serve this Mix Vegetable Pulao hot with raita, salad and chutney or pickle.
