In a pan, add ghee, grated carrot and milk.
Cook till milk fully absorbs and carrot becomes soft.
Add sugar and ghee. Cook till glossy and thick.
Add sooji and cardamom powder.
Cook on low flame till mixture leaves the pan and becomes soft dough-like.
Switch off flame. Let it cool slightly.
While warm, roll small smooth balls.
Keep aside.
Boil milk, simmer.
Add milk powder, sugar, saffron & cardamom.
Add mawa (optional), cook till creamy.
Cool slightly.
Plating:
Pour rabdi in dish .
Place fresh carrot jamun balls
Pour little rabdi on top too
Garnish with pistachio & saffron
U can serve in individual glass
