Step 1

Start with the enchilada sauce. Heat butter in a pan and add maida to it. Whisk for a minute until it turns golden brown.

Add chilli powder, cumin and oregano and slowly pour in the stock to avoid any lumps.

Take the filling off the heat and fold in the grated cheese. The filling should be thick and scoopable.

For the assembly, preheat the oven to 180°C. Warm the tortillas so they can roll easily.

Spread 2 tablespoons of the enchilada sauce on the base of the baking tray. Place 2-3 tablespoons of stuffing on each tortilla, roll them and place them on the baking tray, with the seam-side facing down.

Pour the remaining sauce over the top of the enchiladas. Sprinkle cheese over the sauce.

Bake for 10-15 minutes until the cheese melts and bubbles. Serve warm.
