Chana dal kadhi is a traditional dish of Rajasthan and tastes delicious with chappati.
Wash and soak chana dal in enough water in a large bowl for 4-5 hours. Combine the dal and 2 cups of water and add in a pressure cooker and pressure cook for a whistle. Allow the steam to escape before opening the lid.
Take a kadai and heat it. Add ghee. Add cumin seeds, Asafoetida, mustard seeds and Fenugreek seeds. When the seeds crackle add the bay leave, curry leaves, cinnamon, cloves and sauté. Now add ginger, green chilli and sauté on a medium flame for a few seconds.
Now add cooked dal and cook to 2 to 3 minutes and add turmeric powder, coriander powder, red chilli powder and salt and mix well and sauté on a medium flame for 2 to 3 minutes.
Take a bowl and add curd, 1/4 cup of water and 1tbsp gram flour. Mix it well. Add this curd mix to kadai. Boil it on high flame while stirring continuously. Add little water.
Then low the flame and cook for 7-8 minutes. Switch off the gas.
For tempering: Heat 1 tsp ghee, then add 1/4 tsp cumin, asafetida, then add 1/4 tsp red chilli powder and pour it over the curry and mix.
Chana Dal Kadhi’ is ready to be served. Serve with hot chapati.
