Heat some oil and add jeera. Once the cumin seeds splutter, finely chop the onions and sauté till they turn golden brown.

Chop the green chillies and add them to the sautéed onions. Mix in the ginger-garlic paste and sauté for about a minute. Finely chop some tomatoes, mix them in, and cook till they are soft.

Once the oil starts to separate, your masala base will be perfectly cooked. Lower the flame and add the spice powders, including turmeric powder, red chilli powder, and coriander powder.

Stir well till all the spices are well-mixed. Make sure the heat is really low, or else the spices or onions can start burning.

Next, crumble some paneer and add the masala. Mix it gently while coating the paneer with the spices. Season with some salt to taste.

2 Depending on your preference, you crumble ot chop the paneer. If you like a melt-in-mouth bhurji, crumble the paneer; if you prefer a chunky texture, you can chop it into small pieces.

3 Once you have added the paneer to the kadhai, remember to cook for just two to three minutes. That’s enough for the paneer to absorb the spices. If overcooked, the paneer will have a chewy texture, rather than be creamy.

4 To make the paneer bhruji ever creamier, you can add a tablespoon of milk, malai or even a dollop of curd towards the end.
