Tips and Tricks
The secret to the perfect bhurji depends on the quality of paneer. For a creamier bhurji, use fresh homemade paneer. But if you’re using a store-bought pack, soak it in warm water for at least fifteen minutes to make the paneer softer.
Depending on your preference, you crumble ot chop the paneer. If you like a melt-in-mouth bhurji, crumble the paneer; if you prefer a chunky texture, you can chop it into small pieces.
Once you have added the paneer to the kadhai, remember to cook for just two to three minutes. That’s enough for the paneer to absorb the spices. If overcooked, the paneer will have a chewy texture, rather than be creamy.
To make the paneer bhruji ever creamier, you can add a tablespoon of milk, malai or even a dollop of curd towards the end.
The second half of the paneer bhurji toast is the toast. Before adding the bhurji to the bread, make sure the slices are perfectly toasted. You can use some butter or ghee if toasting on a tawa.
