This dish combines the protein richness of paneer with the goodness of colourful vegetables. Paneer cubes are marinated in yogurt, spices, and lemon juice, then grilled on a pan, tawa, or oven until charred and smoky. The sautéed veggies — like bell peppers, zucchini, broccoli, and carrots — are lightly tossed with olive oil, garlic, and herbs to retain crunch and nutrients.

Together, the grilled paneer and veggies make a balanced plate that’s high in protein, fibre, and vitamins, while being low in carbs. It can be served as a healthy appetiser, a light dinner with roti or rice, or even as part of a salad bowl. Easily adaptable, this dish can also be made vegan by swapping paneer with tofu.

Mix yogurt, ginger-garlic paste, spices, lemon juice, salt, and oil. Coat paneer cubes and marinate for at least 30 minutes.

Sauté veggies
Heat olive oil in a pan. Add garlic and onions, sauté until fragrant. Add harder vegetables (carrots, beans, broccoli) first, stir-fry for 2 minutes. Then add bell peppers and zucchini. Cook for another 2–3 minutes, keeping them crunchy. Season with salt, pepper, and herbs.
