Cheesy Corn Paneer Discs are crispy bread-based snacks topped with a creamy paneer–corn filling and baked or pan-toasted with gooey cheese. A quick party starter that kids and adults love!
Cheesy Corn Paneer Disc is a fun and innovative snack that transforms regular bread slices into delicious bite-sized treats. The base is made from bread cut into discs, lightly toasted, and layered with a creamy filling of crumbled paneer, sweet corn, capsicum, and spices. A generous topping of cheese makes them irresistible.
These discs are versatile—serve them as a tea-time snack, a kids’ lunchbox idea, or as a party appetizer. They’re easy to assemble, and the combination of crispy bread, cheesy topping, and creamy paneer filling makes them an instant crowd-pleaser.
Prepare bread discs.
Cut bread slices into round discs using a cookie cutter or a sharp bowl rim. Butter both sides and toast lightly on a tawa or in the oven until crisp.

Make the filling.
In a bowl, mix paneer, boiled corn, capsicum, onion, green chili, ketchup, mayo/cream, salt, and spices. Adjust seasoning.

Assemble.
Place bread discs on a tray. Spread 1–2 spoonfuls of the paneer–corn mixture on each.

Add cheese.
Top generously with grated cheese.
Cook.
Bake in a preheated oven at 180°C for 8–10 minutes OR cover and cook on a tawa on low heat until the cheese melts.

Serve.
Garnish with chili flakes or oregano and serve hot.

Use brown or multigrain bread for a healthier twist.
To make them crispier, toast bread discs before adding filling.
Add finely chopped spinach or broccoli to sneak in more veggies.
For a spicy version, add schezwan sauce instead of ketchup.
Make mini-discs for bite-sized party canapés.
You can prepare the filling in advance, but assemble and bake just before serving for best texture.
Yes, air fry at 180°C for 6–7 minutes until the cheese melts and bread is crisp.
Simply cook on a covered tawa or pan on low flame until the cheese melts.
Yes, use grated boiled potato or tofu as a substitute.
