Badam Sharbat (Almond Syrup) is a traditional drink known for its cooling and nourishing properties. Prepared by soaking and peeling almonds, blending them into a smooth paste, and cooking with saffron, cardamom, and sugar, the result is a concentrated syrup that can be stored and used to make sharbat instantly.

This almond-rich concentrate can be mixed with chilled milk and ice for a summer refresher, or stirred into hot milk for a comforting winter drink. The almonds provide protein and healthy fats, while saffron and cardamom lend fragrance and warmth.

Often served during festivals, celebrations, or as a rejuvenating drink for guests, Badam Sharbat strikes a balance between indulgence and health. It can be stored in the refrigerator for a week or frozen for months, making it convenient for quick servings.

Soak & Peel Almonds:
Rinse almonds and soak in 3 cups cold water for 8–10 hours. Drain, rinse again, and peel the skins.

Make Almond Paste:
Blend peeled almonds with 1½ cups water and saffron strands into a smooth paste.

Cook the Base:
In a heavy pan, combine almond paste with 6 cups water. Cook on medium heat, stirring often to prevent sticking.

Thicken & Sweeten:
Once the mixture comes to a boil, reduce heat. Simmer for 12–15 minutes. Add sugar and cook 5 minutes more.

Flavor & Store:
Stir in cardamom powder. Remove from heat, let cool completely, and store in an airtight container. Refrigerate up to 7 days or freeze for up to 6 months.

Make the Sharbat:
To serve, mix ½ cup concentrate in a tall glass, top with chilled milk, add ice cubes, and stir well.
For winters, add the concentrate to hot milk for a warm almond drink.
