Step 1

In a bowl, mix semolina, yoghurt, grated ginger, salt, 1 tbs oil and mix well. Add water to this mixture to form a batter consistency. Keep aside for 20 minutes.

Step 2

Divide the batter into three separate bowls Add carrot pulp to one bowl and spinach puree to the other. Mix well

Step 3

Add water to the steamer and let it boil. Put the dhokla mixture in a muffin mould in a steamer for about 15 to 20 minutes. Tri-color dhokla is ready to be served now.

Step 4

For tadka :- Heat 2 tbsp oil in a pan, add mustard and curry leaves and let them cracked for a minute or so.

Step 6

Pour the tadka over the dhokla. Plate it in the shape of tricolour flag and serve.
