Dry roast white sesame till aromatic and popping.

Roast black sesame separately (lower flame).

Roast flaxseed till crackling.

Cool and pulse-grind lightly (70% coarse, 30% fine).

This mix gives binding + crunch + mouthfeel.

STEP 2 — JAGGERY BIND SYRUP

In pan, add jaggery + water.

Melt on low flame.

Add ghee.

Cook till soft-ball stage.

Test: drop in water should form soft flexible ball.

Add roasted seed mix into jaggery syrup.

Shape into smooth spheres (golf-ball size).

STEP 5 — SUN POLISH (HONEY GLAZE)

Warm honey + water.

Brush lightly on spheres.

STEP 6 — ROSE DUST FINISH

Sprinkle rose dust gently on top hemisphere.

PLATING AS “THE SUN”

Place sphere centre of plate.
