Dry roast sesame seeds
Dry roast sesame seeds
Heat a pan on low flame and dry roast the sesame seeds until they turn light golden and aromatic. Keep stirring. Remove and keep aside.
Prepare jaggery syrup
In the same pan, add jaggery and 1 teaspoon water.
Cook on low flame until jaggery melts completely.
Check syrup consistency
Drop a little syrup in water.
If it forms a hard ball and breaks easily, the syrup is ready.
Mix sesame seeds
Add roasted sesame seeds and ghee to the jaggery syrup.
Mix quickly and evenly.
Set the chikki
Transfer the mixture immediately onto a greased plate or butter paper.
Spread evenly using a greased spatula or rolling pin.
Cut and cool
While still warm, cut into squares or desired shapes.
Let it cool completely.
Serve or store
Once cooled, break along the cuts and store in an airtight container.
