Unlike vegetables, you need not always cook them, so it becomes easy to add fruits to the daily diet.  With summer at its peak, you need to reinvent your breakfast schedule with fruity dishes. They are lightweight, fulfilling, and nutritious. Watermelon is among the juiciest fruits that is considered best for keeping your body hydrated in summer. Reportedly, it is 90% water only, and the fruit is rich in nutrients like vitamins C and A. The shell is green with black uneven stripes, and the pulpy portion is reddish pink which makes this an irresistible delight in the hot and humid weather. Belonging to the family of Cucurbitaceae, the fruit has reportedly originated in West Africa and spread across the world. Today, it is grown in India in many states, including Rajasthan, Uttar Pradesh, Maharashtra, Punjab, Madhya Pradesh, and Tamil Nadu. Watermelon Pizza

Satisfy your cravings with this refreshing watermelon pizza. Slice a round watermelon into pizza-shaped wedges, then add toppings such as crumbled feta cheese, sliced cucumber, and fresh mint leaves. Finish with a drizzle of balsamic glaze for a refreshing sweet and salty bite that makes for the perfect poolside snack.

Watermelon Rind Chutney

This chutney recipe is similar to a jam recipe, but it has a more spicy and acidic flavour. Take 3-4 cups watermelon rind, with green skin removed and sliced or chopped into small pieces, 1 cup sugar, ½ tbsp apple cider vinegar, ½ tsp salt, ½ tsp pepper, and some grated ginger. Combine all of the ingredients in a cooker or a kadai and cook for at least 3-4 hours until everything starts to combine. If you want to make it spicier, you can add red chili powder. After the chutney has come together, you can keep it the same consistency or combine it into a paste. 

 

Watermelon Gazpacho

Cool off with this chilled watermelon gazpacho. Blend diced watermelon, tomatoes, cucumbers, red onion, and jalapeño pepper until smooth, then stir in lime juice and chopped cilantro. Serve in chilled bowls with a dollop of Greek yoghurt for a light and refreshing summer soup. 

Watermelon & Shrimp Ceviche

Transport your taste buds to the tropics with this zesty watermelon and shrimp ceviche. Combine fresh shrimp, diced watermelon, red onion, jalapeño pepper, and cilantro in a bowl, then stir in lime juice using a juicer and season with salt and pepper. Chill in the refrigerator for at least an hour before serving with tortilla chips or as a topping for tostadas. 

Watermelon Sorbet

All you need in this monsoon season is a refreshing bowl of watermelon sorbet. A simple and incredible homemade dessert that will not only make you happy but will also give kids a break from the outside food. Here is how to make it, cut and deseed the watermelon. Take a blender and make a smooth watermelon puree. Pour it into a shallow dish and let it freeze for an hour. After an hour, take it out, stir it with a fork, and put it back in the freeze; repeat this process in 30 minutes for almost 3 hours. Until the sorbet is firm and scoopable. Then scoop, and serve it.  

 

Watermelon Curry

This watermelon curry recipe is a speciality of the Indian state of Rajasthan. It is a combination you most likely have never heard of before. It goes great with some steamed rice or flatbread like naan or kulcha. To prepare this curry, start by cooking in a deep pot with diced watermelon in a blend of spices like cumin, mustard seeds, and hing (asafoetida). The curry is typically finished with a garnish of fresh coriander and served hot, offering a refreshing and flavourful experience that is distinct to Rajasthani cuisine. 

Watermelon Avocado Toast

Watermelon’s sweet notes impeccably complement the nutty flavour of an avocado. Toast a few slices of bread and add your favourite dip in a small quantity. Top each toast with chopped watermelon and avocado. Drizzle balsamic glaze, sprinkle salt, and add crumbled feta cheese on top to finish the dish. You can add a pinch of black pepper as well before biting into the toast. 

 

Watermelon Parfait

Apart from cheese, watermelon also gels with cottage cheese or paneer. Take a clean glass, and layer paneer with sliced or diced watermelon. Add roughly chopped granola bars and chopped nuts on the top. Complete the parfait with some whipped cream, fresh berries, and grated chocolate. While you get ready for the office, refrigerate the parfait, and enjoy it before leaving.

Watermelon granita is a perfect dessert to enjoy during a hot summer day. This refreshing Italian dessert is made with pureed watermelon, sugar, and lemon juice. The mixture is then frozen and scraped with a fork to create a granular texture.
