Step 1

Mix rava, curd, and water to make a thick batter.

Step 2

Let it rest for 10–15 minutes (rava absorbs moisture).

Step 3

Add carrot, capsicum, cabbage, peas, onion, chili, ginger, coriander. Add salt and mix well.

Step 4

Prepare Tadka (optional but tasty): Heat 1 tsp oil, add mustard seeds & curry leaves.

Step 5

Pour into batter.

Step 6

Just before cooking, add eno and mix gently (makes appe fluffy).

Step 7

Cook Appe: Heat appe pan, grease with little oil.

Step 8

Pour batter into each cavity. Cook on medium flame till golden. Flip and cook other side.
