Step 1

Wash Basmati rice properly and soak for half an hour

Step 2

Then boil it and cook till it becomes soft

Step 3

When done strain out the excess water

Step 4

Now divide the cooked rice into three portions

Heat 1 tsp ghee in a pan and put rai jeera urad dal methidana and heeng

Step 6

Let them splutter then add chopped onion curry leaves and one green chilli

Step 7

Cook on low heat until onion becomes light pink

Step 8

Then add salt and one portion of cooked rice mix well

Step 9

Now add curd and switch off the gas and mix nicely white rice is ready

Step 10

Again heat 1 tsp ghee and put jeera and green peas

Step 11

Cook on low heat until peas become soft

Step 12

Now add salt and second portion of rice and green chutney mix nicely

Step 13

Green rice is ready

Step 14

Again heat 1 tsp ghee and put jeera let it splutter

Step 15

Then add onion and one green chilli

Step 16

Cook on low heat until onion becomes light brown

Step 17

Then add red chilly powder and dhania powder and mix well

Step 18

Now add tomato puree cook on low heat until the moisture evaporates

Step 19

Then add the last portion of cooked rice and add sambhar powder and mix nicely

Step 20

Orange rice is ready

Step 21

Serve: Take three small earthen pots and serve each flavour of rice in each pot
