It is made by steaming, requiring only 8 minutes to cook. This kid-friendly, nutritious, and vibrant dish is ideal for tiffin boxes or a fun breakfast. By topping the idlis with tomato ketchup and corn, I have introduced a great colour eye catching contrast and a satisfying crunch that elevates these from simple steamed cakes to a gourmet appetizer.

Step 1

Mix the semolina, yogurt, pureed corn, ginger-chili paste, , and salt. Add water as or of needed to reach a thick, pourable consistency.

Step 2

Right before steaming, fold in the Eno.

Step 3

Pour idli batter into greased idli molds.

Step 4

Place sweet corn kernels around idli batter in moulds to shape like flower

Step 5

Steam the idlis for 8 minutes until firm.

Step 6

Once the idlis are steamed, remove them from the moulds.

Step 7

Place dollop of tomato kechup in the centre.

Step 8

Arrange curry leaves below idlis .

Step 9

Serve Sunflower idlis
