Suji Kachori with Aloo Sabji (in Appe Pan)

Step 1

Prepare Suji Dough: Boil water with salt, ajwain and oil. Add suji slowly and mix continuously. Cook for 2–3 minutes till dough forms. Cover and rest for 10 minutes. Knead lightly.

Step 2

Make Stuffing:  Heat little oil. Add cumin and spices. Mix mashed potatoes and cook for 2 minutes. Add coriander and cool.

Step 3

Shape & Cook in Appe Pan: Grease appe moulds lightly.

Step 4

Take small suji dough balls, flatten and fill stuffing. Seal and shape round.

Step 5

Place into appe pan cavities. Cover and cook 4–5 minutes on low flame. Turn gently and cook another 4–5 minutes until golden.

Step 6

Prepare Aloo Sabji: Heat oil, add cumin and tomato. Add spices and mashed potatoes. Add water and simmer 8–10 minutes. Garnish with coriander.
