Step 1

Wash and soak the whole ragi overnight (8-12 hours). Drain and blend with 1 cup water until smooth.

Step 2

Strain if you prefer a smoother kheer, or use as is for more fiber. In a saucepan, cook the ragi mixture with the remaining water for 8-10 minutes, stirring continuously.

Step 3

Add milk and continue cooking for another 10-15 minutes until thick. Add finely chopped dates or date paste and cook for 2-3 minutes.

Step 4

Stir in cardamom, saffron, and nuts. Serve warm or chilled.
