Mix flour + salt, add water gradually, knead into a soft dough. Rest for 15–20 mins.
Squeeze water from grated lauki (important to avoid soggy parathas). Mix with paneer, onion, spices, and herbs.
Divide dough into balls. Roll slightly, place filling inside, seal, and roll gently.
Cook on hot tawa with oil/ghee until golden brown on both sides.
