Prepare Dough: In a bowl, add wheat flour, salt, and oil.
Mix well and add water little by little.
Knead into a soft dough. Cover and rest for 15–20 minutes.
Prepare Stuffing: Slightly crush the sev with your hands.
Add chopped onion, coriander, green chili, spices, salt, and lemon juice. Mix gently.
Use immediately so the sev stays crunchy.
Make Paratha: Divide dough into equal balls. Roll one ball into a small circle.
Place 2–3 tablespoons stuffing in the center. Seal the edges carefully. Roll gently into a paratha.
Cook: Heat a tawa on medium flame. Place the paratha on the tawa.
Cook both sides until golden brown. Apply ghee or oil and roast well.Serve With Green chutney
