Step 1
Rinse poha lightly, drain, and keep aside (don’t soak too long or it gets mushy).
Step 2
Heat oil → add peanuts → roast till crunchy. Remove and keep aside. In the same pan, add mustard seeds + cumin seeds → let them splutter.
Step 3
Add curry leaves, green chilli, onion → sauté till soft. Add potato + veggies → cook till tender.
Step 4
Add turmeric, salt, chilli powder, garam masala. Add poha → mix gently. Sprinkle a little water if dry.
Step 5
Cover and cook 2–3 mins on low flame. Add peanuts back, squeeze lemon juice, garnish with coriander. Serve hot!
