Rajasthani Dal Dhokli

Step 1

Wash Toor Dal & Moong Dal and pressure cook with turmeric, salt and 3 cups water.

Step 2

For Dhokli, mix wheat flour, besan, ajwain, turmeric, chilli powder, salt & oil. Knead into a soft dough.

Step 3

Roll the dough into a thin roti and cut it into small diamond or square pieces.

Step 4

Heat ghee in a pan. Add rai, jeera, hing, green chilli & ginger.

Step 5

Add red chilli powder, coriander powder, amchur, jaggery and tamarind water. Mix well.

Step 6

Add cooked dal and adjust the consistency with water. Let it boil.

Step 7

Slowly add the dhokli pieces one by one, stirring gently so they don’t stick together.

Step 8

Cook on medium flame for 10–12 minutes until dhokli becomes soft and cooked properly.

Step 9

Garnish with fresh coriander and a little ghee.

Step 10

Serve hot with extra ghee on top.
